makes approx. 3-4 cups gravy
roasting juices in pan after roasting turkey (approx. 1/2 - 1 cup)
use a large spoon to remove fat from pan if it seems like there is a lot...a little is okay
2 cups chicken stock
1 cup chicken stock well mixed with 4 Tbs flour (see procedure below)
salt and pepper to taste
I used a heavy, metal roasting pan for roasting the turkey and I roasted it on top of the giblets, some rough chopped carrots, celery and onions and I also added a generous 1 cup each of water and chicken stock to the roasting pan over the course of the roasting time. There was approx. 1 cup liquid left in pan when turkey was done.
When it comes time to make the gravy, take the giblets and the roasted vegetables out of the pan and, if there seems to be a lot of fat in the pan, use a large spoon to scoop most of that out, before adding 2 cups of chicken stock and bringing it up to a simmer.(see hints below)
Use a wooden spoon to scrape up the flavor off of the bottom of the pan and, while that's gently simmering along, add 1 cup of chicken stock to a jar with 4 Tbs of all-purpose flour....put the lid on top...and vigorously shake it until it is well combined.
After the stock has been simmering along for 5 minutes or so, slowly add some of the chicken stock and flour mixture...using a whisk to incorporate that as you go...until you are happy with the consistency.
You might end up using all of the flour and chicken stock mixture (or even more...see hints below) and it'll thicken up as it continues to cook along.
Season to taste with salt and pepper and very carefully strain the gravy through a fine mesh sieve into a mixing bowl and then transfer that to a gravy boat.
I added 3 Tbs flour to the jar but, in retrospect, I'd say add 4 Tbs instead. And then, if the gravy isn't as thick as you like, make a little more flour and stock mixture to add as needed.
You can combine flour and milk instead of flour and chicken stock it you like.
If you happen to roast the turkey in a disposable aluminum pan instead of a heavier metal pan like I did, you can add a little chicken stock to the liquid in the aluminum pan and then pour that into a heavier metal pan and make the gravy in that.
